Nutritional salad with quinoa in no time !!
~ 200 g Quinoa
~ 250 ml of vegetable broth
~ 1 avocado cleaned and cut into cubes
~ 4 fresh onions cut into thin slices
~ 1 tomato cut into cubes
~ 1 cucumber cleaned and cut into cubes
~ 100 ml of olive oil
~ Juice from 2 lemons
~ 1 small spoon of mustard
~ 1 small spoon of honey
~ ½ bunch of parsley only the leaves
~ ½ bunch of dill finely chopped
~ 1 bunch of fennel finely chopped
~ Salt, freshly ground pepper
Boil the quinoa with vegetable broth and a little salt in a covered pot and on a soft fire for 15 minutes.
Mix the rest of the ingredients in a bowl, add cinnamon, adjust the salt and pepper and serve.
