Healthy cake with cranberries
The Taste of the New Year!
Servings: 8-10 pieces
Preparation time: 10 minutes
Baking time: 40 minutes
Ingredients:
100 g raisins (Find them in our e-shop)
100 g dried cranberries (Find them here)
100 g prunes (Find them here)
20 g cognac
20 g water
180 g brown sugar (See it in our e-shop)
240 g cow butter at room temperature (Find it here)
5 eggs
200 g farina (wheatmeal)
1 pinch of salt (Add it here)
1 tsp cinnamon (Try it here)
10 g butter
20 g of flour for molding (Find it here)
Execution:
Place the raisins, cranberries, plums, cognac and water in a food processor and pulse until pureed.
In an electric mixer, beat the butter and sugar until light and fluffy.
Add the eggs one at a time, continuing to beat for 2-3 minutes.
Add the Farin Up, salt and cinnamon and mix until the dough is smooth.
Add the pureed fruit and beat for one minute.
Butter and flour a round baking pan, add the dough and flatten the surface.
Bake in a preheated oven in the convection oven for 20 minutes at 190ºC and another 20 minutes at 170ºC. Check with a knife to see if it is ready.
Allow the king cake to cool for 10 minutes, then remove it from the oven and place it on a wire rack for another 15 minutes.
Tip: Decorate the cake with a little icing sugar and cranberries for an impressive look!
