Healthy muffins
Ingredients:
~ 175 gr. flour for all uses
~ 50 gr. coconut sugar
~ 1 tbsp baking powder
~ 1 pinch of salt
~ 1 tbsp cinnamon
~ 1 pinch of nutmeg
~ 1 pinch of cloves
~ 2 bananas, ripe
~ 2 eggs, medium
~ 120 gr. Maple syrup
~ 120 gr. almond drink
~ 20 gr. coconut oil
~ orange zest, from 2 oranges
~ 40 gr. walnuts, cracked
For serving
~ 30 gr. honey
Method:
Preheat the oven to 170°C in the air.
Place 12x12 cm pieces of parchment paper in 8 individual muffin cases and set aside until needed.
Put the flour, coconut sugar, baking powder, salt, cinnamon, nutmeg, cloves in a bowl and mix them with a spoon.
Put the bananas in another bowl and mash them with a fork until they are mashed.
Add the eggs, maple syrup, almond drink, coconut oil, orange zest, and mix with a hand whisk until the ingredients are smooth.
Add the flour mixture to the bowl and mix with a spoon, until the ingredients are homogenized.
Divide the mixture into the muffin cases and add the chopped walnuts on top.
Bake in the oven for 20-22 minutes.
Remove the muffins from the oven and set them aside to cool.
Sprinkle the honey and serve.
