Mediterranean pasta with chicken
Ingredients:
180 g peeled artichokes
1 tblsp olive oil
360 g of purified chicken fillet, cut into small pieces
¼ cup chicken broth (or chicken cube)
¼ cup dry white wine
1 tbsp oregano
200g red peppers (ready to jar)
¼ cup black olives pitted
3 cups penne pasta or Farfalle
¼ cup feta cheese into cubes
Execution:
If the artichokes are fresh boil in a saucepan for 10 minutes. Then cut into pieces.
In a large skillet, heat olive oil and add garlic and chicken. Saute until they get golden color
Add a little water, chicken broth, wine and oregano and let it boil for 10 minutes
Then add the olives and peppers
Boil and drain pasta and serve with a few cubes of feta
