RECIPE
RED BEANS WITH RICE
Ingredients (for 5-6 people)
150 gr. red dry beans ALL BIO
150 gr. ALL BIO black-eyed beans
1 package of vegetable broth,
½ cup e.p. olive oil + 3 tbsp. extra (for sauteing the corn)
3 onions, chopped
2 green peppers, cut into short sticks
400 gr. Concasse tomatoes, chopped BIO-HEALTH
1 tbsp paprika ALL BIO
salt and pepper
1½ fl. long grain rice ALL BIO
150 gr. canned corn, drained
Implementation
Let the beans swell for several hours in water that covers them. Drain them, rinse them and boil them for 1 hour in water, into which we have poured the vegetable stock. Once they are ready, drain them again and set them aside.
Heat the olive oil in a saucepan and sauté the onions and peppers. Add the tomatoes, paprika, salt, pepper and, finally, the beans. Simmer over low heat, until the ingredients soften and absorb their liquid.
In another vessel, boil the rice, without letting it swell, and drain it.
Pour the remaining olive oil into a deep pan and fry the corn. Add the rice, beans and a little salt. Mix well with a wooden spoon and serve.
