Fibremix sponge cake recipe
85g NoCarb fibre mix, 4 eggs, 4 tablespoons of oil, 150ml water, 8 tablespoon of sweetener, dash of salt, baking soda, vanilla
Separate egg whites from yolks. Mix the egg yolks with the vanilla, 4 tablespoons of oil and half of the sweetener until you reach a runny foam texture. Add the water and stir again.
Beat the egg whites with the remaining sweetener and the salt until they become stiff.
Mix the baking powder in the fibre flour, and add them to the egg yolks mix. Stir again. Pour half of the mix in the egg whites and stir using circular moves, from the bottom to the top, with a silicone spatula. Add the remaining mix and stir using the same technique. Bake the cake in a preheated oven at 180ºC (356ºF) for 35-40 minutes or until the cake has turned golden.
