Black lentils are rich in protein and fiber, and just half a cup of cooked black lentils contains about 12 grams of protein and 9 grams of fiber, a powerful combination that can keep us full and energized for much longer than other foods.

Beluga lentils are extremely tasty, they are described as the caviar of lentils and one of their properties is that they are easier to digest than regular lentils.

Lentils have a very high percentage of protein, which makes them an excellent alternative to meat. It's also an excellent source of iron, a mineral sometimes lacking in vegetarian diets

Lentils are an excellent source of health-promoting polyphenols, which have powerful antioxidant and anti-inflammatory properties with potential inhibitory effects on cancer cells. Materials

2 fl. black beluga lentils ALL ORGANIC (boiled and strained)

2 fl. chopped lettuce

1 diced avocado

1 diced yellow pepper

1 pint. chopped radicchio

Sauce:

6-8 tbsp. olive oil

zest and juice of one lime

2 tbsp Dijon mustard

1/2 tsp. pink Himalayan salt

Implementation

1. Put all the vegetables in a large bowl, pour over the sauce that we have previously whipped, mix well and serve.
