Coconut Oatmeal Cookies

2 sticks + 1 tbsp (240g) unsalted butter, softened
7 oz (200g) granulated sugar
7 oz (200g) brown sugar
2 large eggs
1 tsp Taylor & Colledge Vanilla Bean Paste
1/2 tsp Taylor & Colledge Coconut Extract Paste
10.5 oz (300g) all-purpose flour
1/2 tsp salt
1 tsp baking soda
1/2 tsp baking powder
5.5 oz (160g) rolled oats
2.5 oz (75g) desiccated coconut
Step 1: Preheat the oven to 350F and line a baking tray with parchment paper.
Step 2: In the bowl of an electric mixer, beat the butter and sugars until pale and creamy. Add the eggs, Vanilla Bean Paste and Coconut Extract Paste and mix until combined.
Step 3: Sift the flour, salt, baking soda and baking powder into the bowl and mix them in. Add oats and coconut, mix well to combine.
Step 4: Using a tablespoon of dough at a time, roll it into balls and place the tray then flatten each one slightly with fingers or a fork.
Step 5: Bake for 10-12 minutes or until golden brown. Remove from oven and transfer cookies to a wire rack to cool.
