200g olive oil
40g baking powder
1 tablespoon cinnamon
1/2 tablespoon cloves
A little lemon zest
A little vodka or raki
250g soft flourlocust bean 250g
180g Cretan gruyere
1. Beat sugar and eggs in a blender. When the mixture is thick and whitened add hot milk, olive oil, raki, baking powder, cloves and cinnamon.
2.Then add the flour, locust bean, almonds, Cretan cheese and lemon zest.
3.Place the mold in the preheated oven for 45 minutes at 170 degrees.
4.When ready let it cool, and then remove the cake.
5.Optionally sprinkle with a little charouposkoni.
